Dessert Wine Gelees with Citrus Fruit


Ingredients - Sastojci:

  • 5 tablespoons cold water - 5 kasika hladne vode
  • 3 packages unflavored gelatin (about 3 tablespoons total) - 3 pakovanja zelatina (oko 3 kasike)
  • 1/2 cup sugar - 1/2 solje secera
  • 1/2 cup water - 1/2 solje vode
  • 1 cup orange muscat dessert wine - 1 solja orange muscat desertnog vina
  • 1 1/4 cups Sauternes or similar sweet wine - 1 1/4 solje Sauternes vina ili slicnog
  • 1 each grapefruit, blood orange, navel orange, tangerine, and Meyer lemon, or another combination

Preparation - priprema:

Combine 5 tablespoons cold water and gelatin in a bowl. Let stand 5 minutes.
- Rastopiti zelatin u 5 kasika hladne vode. Ostaviti da odstoji 5 minuta.
Combine sugar, 1/2 cup water, and wines in a saucepan over medium heat. Simmer until sugar has dissolved. Add gelatin mixture, and whisk until melted. Cook 1 minute. Remove from heat, and pour through a fine sieve into a 9-by-13-inch glass baking dish. Let cool completely.
- Rastopiti na sporetu na srednjoj temperaturi secer, 1/2 solje vode i vino. Krckati dok se secer ne istopi pa dodati rastopljeni zelatin i mutiti dok se lepo ne istopi i masa se sjedin. Kuvati oko 1 minut pa skloniti sa vatre i procediti kroz fino sito u staklenu posudu 23x33 cm. Ostaviti da se potpuno ohladi.
Cut peel and pith from citrus. Cut each segment from membranes, then cut horizontally into 1/8- to 1/4-inch-thick slices (you will need 1 cup). Arrange in a single layer over gelatin mixture. Refrigerate, uncovered, overnight.
- Oljustiti citrusno voce. Iseci parcice i odstraniti membranu a zatim seci parcice debljine oko 1/2 cm (potrbna kolicina je oko 1 puna solja). Voce poredjati po zelatinu u jednom sloju i ostaviti nepokriveno u frizideru preko noci.
To unmold, run a knife around edge of dish. Using an offset spatula, gently coax gelatin from sides. Invert and turn out onto a cutting board. Trim edges, and cut into 1 1/4-inch squares. Serve immediately, or refrigerate, uncovered, up to 1 day.
- Nozem odvojte zelatin od ivice oko modle. Koristeci lopaticu polako odvojte zelatin od ivica. Izrucite - prevrnite masu na dasku za secenje. Doterati ivice i seci kockice velicine 3 cm. Servirati odmah ili ostaviti u frizideru nepokriveno do 1 dana.
